Hello green goodness ETA


You know when you are asked what your favorite food is?

I never really know what to say. 

I love all kinds of food.

I think though my favorite food is definitely avocado.

I mean I seriously, absolutely, definitely LOVE avocado,
like to the point of eating one with every single meal!


Is that weird?

I know they are full of fat, but it's the good kind of fat, 
so it's really okay to eat them a bunch, right?

If you happen to be reading this and grow avocados 
and need to get rid of some, you can go ahead and ship them here to me.

I would love you forever.

Also, did you know that you need 2 avocado trees to get avocados? I know this because when I was a kid my mom and I grew a tree, from a pit we saved from an avocado... but no fruit! Then a neighbor planted one... and VOILA!!!

I got the blues

and I am darn happy about it!!!!

Oh yeah Baby!!!  Those are the most luscious blueberries I've ever eaten! 




I picked these over in Izard County at the Piney Fork Blueberry Farm.  
My first time to go and I'll say I was pleasantly surprised!  
The people are super nice and so helpful. 



I went early enough that it wasn't hot yet so ended up picking an extra gallon for my aunt. 
(I'm super nice like that.)



mmmm, I love me some blueberries.

(I)scream

Is there really any more to say?
There really is probably not any more to say, but if you know me at all, you know I always have to say something more! :)


After a great lunch meeting today in Mammoth Spring (home of the Spring River) we -we being my friend and co-worker, Suellen and I- treated ourselves to the ice cream shop that was in the same restaurant. 

Spring Dipper ice cream is incredible!  The people that own both establishments are super nice and he makes the ice cream there.  I just could not decide, so I indulged in the sampler!  5 mini-dips of your choice.  Heck, I cannot even tell you what these are, but I can tell you one thing: DEEEEE-licious!

some foodie love

So if you are my Facebook friend, you probably know about a lot of this. I'm thinking FB is the downfall of my blog - as I feel I am somewhat repetitive.

Anyway....I have some food-stuff to share.

#1 - go out and get - or call from the infomercial and order - one of these bad boys:

I now actually have breakfast because of this little beauty.

Now, I will tell you they tout the fact that you can make practically anything in this little bullet of fun, but I have yet to get past smoothies and milkshakes!

All kidding aside, I have started eating a little healthier lately and hope I can continue to find ways to bring more healthy choices into my household.

#2 - Make this:  Grilled Caribbean Lime Chicken with Tropical Salsa and some Grilled Corn on the Cob on the side.
Again, trust me, it will make your mouth happy - it's so summery and tropical.  Plus, you don't even have to turn on your oven or stove!
My mom gave me a gift subscription to the Taste of Home's Healthy Cooking magazine and this month's issue is chock full of grill recipes.  Oddly, this particular recipe was also on their home page when I went to the website!

Ingredients
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 teaspoons Greek seasoning
  • 8 boneless skinless chicken breast halves (6 ounces each)
Salsa:
  • 2 large tomatoes, seeded and chopped
  • 1 cup diced fresh pineapple
  • 2/3 cup cubed avocado
  • 2 green onions, thinly sliced
  • 1 tablespoon lime juice
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Directions: 

  • In a large resealable plastic bag, combine the lime juice, oil, garlic and Greek seasoning; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. In a small bowl, combine salsa ingredients. Chill until serving.
  • Using long-handled tongs, dip a paper towel in cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes on each side or until a meat thermometer reads 170°. Serve with salsa. Yield: 8 servings.

#3 - Pickled Beets!  Oh yeah Baby!
If you have never had a true pickled beet - not that canned crap they sell at the grocery store...that is a beet impersonator, you don't know what you are missing.


These are out of my mom and stepdad's garden.  Our family loves beets and every couple of years, my mom cans the pee-waddly-do out of some beets!  I went last week and helped can this batch.  Granted she and Randy had done the hard part - planting, harvesting, cooking, peeling, cutting, but darn-it I helped can them!
They are so pretty with their bright fuschia color which will stain by the way but the taste is quite addictive as well.  They are perfect alongside a sandwich or hamburger...really any meal!
I hope to gain more knowledge on the whole canning thing from Mom so I can one day do this stuff on my own.

10 of clubs - Love these vintage/retro kitchen labels that I picked up at the Stock Exchange - my cousin's groovy shop. Love weeknights when dinner is simple*quick*good! Just like my poppyseed chicken. Had the chicken cooked last night while fixing that dinner, so it was easy peasy!

used matte photo paper as base with ribbon, label and an "e" brad for easy, of course! :) .01 black zig and fine AC slick writer, MM date stamp.

Edible Color

Say it with me now...."YUM-O." Fresh Veggies - compliments of one of my bff's Karla. Wow two posts in a row featuring Karla. I just couldn't pass up this photo-op of color goodness. It's twice as nice when it's eye candy and belly candy! She always shares her garden goodies with her friends. I'm sure this is only the beginning of her harvest. Everyone pray for rain at her house.
